Eric Adams is, allegedly, New York City’s first “plant-based slash vegan” mayor. He made a point to talk about his plant-based lifestyle throughout last year’s campaign and carried that philosophy into City Hall. Just last week, Adams launched “Vegan Fridays” at public school cafeterias in New York City, a lunch-menu initiative rolled out as part of a larger push to serve healthier food to students.
